Aubergine rolls by Esperanza

Amazing aubergine rolls


Ingredients:


  • Two large aubergines.

  • One tomato.

  • One green pepper.

  • One onion.

  • ¼ chopped veal.

  •  100 grams of grated cheese.

  • Two spoons of olive oil.

  • A pinch of salt.

  • 250 grams of fried tomato.


( wash vegetables thoroughly before cooking)

Method


  • Chop the pepper, tomato and onion.

  • Add the salt.

  • Pour the two spoons of oil in a pan and fry the vegetables over low heat.

  • Add minced meat and cook until meat is toasted.

  • Peel and slice the aubergines.

  • Put water to boil in a saucepan and add the aubergine slices.

  • Spread the aubergine slices in a baking dish.

  • Place on top the meat and vegetables that we have fried and roll the aubergine sheets.

  • Cover the rolls with fried tomato.

  • Sprinkle the grated cheese on top.



Preheat the oven to 250°. Cook the rolls for 30 minutes.


Present your delicious rolls on a nice plate decorated with a mint leaf.
